The traditional rough processing method of star anise has natural drying method, stove baking method, wood retort distillation method.

Natural drying method

First put fresh star anise into boiling water pot hot for 5-10 minutes out, spread on the bamboo mat in the sun, or directly spread in the sun on the field for 5-6 days, drying is the finished product, this method of dried fruit brown red bright, but the smell is slightly worse.

Stove baking method

The height of the oven is about 100 cm, the length is about 250-300 cm, and the width is about 150 cm. The baking bed is made of barbed wire, and the star anise is spread on the barbed wire, and a small fire is fired under the bed. The dried fruit obtained by this method, without paying attention to the turning, will be roasted black, roasted for two days and two nights, and dried. Some people make the star anise color good, adding sulfur when baking, this is harmful to the human body to prohibit the practice.
